SWEET ANISE APPLES
The wildest, most uninhabited day of Carnival is called Shrove Tuesday literally the fast engaged in on Lenten Eve. Mostly this is a day that offers healthful (???) breakfast treats for Shrove Tuesday breakfast. One of these treats are SWEET ANISE APPLES.
Serves 6 – 8
- 4 apples quartered and thinly sliced
- ½ cup of undiluted frozen apple juice concentrate
- ¼ teaspoon anise seeds, crushed
- 2 teaspoons sugar or 1 envelope sugar substitute (add the sugar with the vanilla)
- ¼ teaspoon vanilla
Combine all ingredients except vanilla and sugar substitute in a small saucepan. Cover and cook over low heat until apples are mushy – about ten to 15 minutes. Remove from heat then add the vanilla. Serve over pancakes or low-fat yogurt or as a topping for rice cakes.
