SPRINGTIME OVEN OMELET
Since the dawn of time, eggs have been associated with new beginnings and have figured prominently in fertility rites, both human and agricultural. The Persians believed that the earth was hatched from a cosmic egg, a notion shared in both Egypt and Greece as well. The egg, a symbol of earth and life, was though to be the seat of the soul.
- 2 tablespoons olive oil
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- ½ cup julienned fresh spinach
- 1 tablespoon water
- ½ cup sliced scallions or green onions
- ½ teaspoon dill seeds
- ¼ teaspoon black pepper
- 3 large eggs
- 6 egg whites
- 1/3 cup plain yogurt
- 1/3 cup skim milk
- 1 tablespoon flour
Heal oil ins a nonstick skillet, then add vegetables Stir and cook over medium heat 5 minutes. Add water, reduce heat to low, cover and cook about 5 minutes. Stir in green onions, dill seed and pepper. Spray a 6 by 10 inch pan. Beat eggs whites. Yogurt, milk and flour together. Pour over vegetables in the pan. Bake at 425 degrees for 20 minutes. Serve with salsa as garni.
