This is the perfect time of the year to cook with rhubarb. In days gone by you could only get rhubarb if you (or someone you knew) grew your own but these days you can buy it at practically any green grocer or food store that sells different types of fruits, vegetables and herbs. Eating rhubarb during this month will further bring more May magic into your insides and out.
Makes 4 Cups
- 4 cups sliced rhubarb
- ¼ cup sugar
- ½ cup minced sweet cicely
- ½ teaspoon ground cloves or one grated orange rind
Pour boiling water over the rhubarb. Let stand for 3 minutes and then drain. Combine ingredients in a saucepan. Almost cover with water and simmer for 20 minutes. Enjoy alone or as a topping for vanilla yogurt or ice cream.
