Fast Feasts from the Fortunate Kitchen
“Is your refrigerator running, then you better go and catch it.”
“Do you have Prince Albert in a Can, well, then, for goodness
sake, let him out.” Salt in the sugar bowl, putting someone’s
hand in warm water while they’re sleeping, ice down the back,
you know, the usual practical jokes played especially well on April
Fool’s Day. But what about fooling your friends and loved ones
with food that’s not only a mocked up version but is actually
good for them too?
Take salt, for instance. There is a category of food named for another
traditional salt substitute that will shake the blues right out of any
dish and lend a delicious depth instead. Add some SAVORY and you can
be sure to pepper your palate with this pleasing condiment. Or you can
add a dash of vinegar, fresh lemon and lime or even some pickling spice
to add savor while sending salt to the showers. And don’t forget
low sodium soy sauce. When mixed with a slightly acidic red wine (2
parts wine to 1 part low sodium soy) not only will you banish the bloat
but your (taste) buds will never know the difference.
And, you’ll never miss the sour cream if you use some plain yogurt
mixed up with chives, lemon juice and a teaspoon of low fat cottage
cheese on your baked potato. You might want to keep the cream in your
coffee, but, if you want to get the true skinny of creamy based soups,
just whip them up with evaporated skim milk.
Like carob for chocolate, shredded carrots as filler in meatloaf and
undiluted frozen juice concentrate in the place of sugar and all it’s
sweet, empty calories, there are many, many ways to bring health to
the table without having to apologize afterward! No fooling with these
tasty teases, it’s all for your own good!
